I learned my worth the hard way a long time ago.

Nothing has ever come easy for me and I’ve fought to become the person that I am today..

So, when I say I know my worth, I’ve paid for it dearly..

In countless broken hearts, dead end relationships and lessons learned the hard way.

Sure, there were times when I wished my journey was a little easier or things went my way more often,

But I’ve learned that everything happens for a reason..

And everything I’ve been through helped me forge a strength that won’t die and a belief in myself that no one can ever take away from me.

So, when I tell you that I’m a keeper, I’m not just talking to hear myself talk..

I truly believe that about myself.

I’m a keeper-

One of the beautifully deep and passionately fiery souls that pour all of themselves into everything they do and everyone they love.

So, I’m standing here telling you that you have the chance to love me.

Not on your terms or mine, but with mutual respect, communication and love.

I’ll never be okay being just an option or will I ever accept fighting for your attention.

So, this is your one chance to love me the way I deserve.

Maybe I’m not the one for you or maybe you aren’t ready..that’s not for me to say.

Crock Pot Pineapple Salsa Chicken Recipe Idea

 


Busy mommas, crockpots are your secret weapon—Easy prep, clean ingredients, and no last-minute dinner stress, all while

supporting your wellness goals and feeding the whole fam!


Crock  Pot Pineapple Salsa Chicken๐Ÿ˜‹


Ingredients:

27 oz raw chicken breasts (3 Leaner Leans)

1/2 cup Trader Joes Pineapple Salsa (8 Condiments)

1 tbsp soy sauce (1 Condiment) or liquid coconut aminos. 

1/4 cup chicken broth (1/4 Condiment)


Directions:

Add chicken breasts, salsa, soy sauce and chicken broth to a crock pot.

Cook on LOW 4 to 6 hours. Shred chicken when cooked. 


Divide into 3 portions.

Serve each portion over 1 1/2 cups cooked riced cauliflower or any approved Greens of your choice.


3 Servings with 1 Leaner Protein and 3 Condiments per Serving

1 Healthy Fat is still needed. 

Some great options are 1 1/2 oz of avocado, 2 tbsp of guacamole, or 2 tbsp of sour cream.

I’ve had my spirit crushed, my dreams shattered and my heart broken..

But I’m still standing.

There’s been days when I didn’t think I’d make it through, but I’m that person that doesn’t know how to quit.

Behind my fiery eyes, you’d see the memory of a broken girl that swore she’d never again let anyone take away her dreams.

So, when love tried to break my heart, life tried to burn me down and people tried to tear me apart, I just smiled and kept going.

I’m stronger than anyone will ever know.

It’ll take a lot more to bring me down than bad days, mean people and wrong choices.

I’ve cried countless tears, been hurt too many times and been counted out way too often..

And yet, I still keep getting up, getting better and getting stronger.

That’s who I am and will always be.

I keep high walls around my heart and I’m selective about who I let in, but once you’re in, I’ll be there for you whenever you need me.

I love hard when there’s love to be had, but I don’t sacrifice my self respect for a chance to be loved..

If love doesn’t come to me on my terms, with respect and truth, then I’m walking the other way.

I don’t have time or the patience for games, I grew out of that nonsense long ago.

So, when you see my bright smile and fiery facade, know that it came with a price.

I know my worth, because I paid for it dearly in disappointment, heartbreak and pain..

So, if you want to know me- the real me- be prepared to be patient, honest and passionate..

I don’t do halfway and I don’t give my love easily..like my trust, it must be earned.

I realize that I’m not everyone’s favorite flavor, and I’m good with that..I never set out to make everyone like me.

I like me, and that’s what matters most.

That self love came with a price at the end of a long journey that I’m still walking, and I’m never letting anyone treat me less than I deserve.

So, yes, I’ve learned to dance in broken glass, build castles from shattered dreams and to wear my tears like precious pearls..

But that’s what makes me one of a kind.

I may be a lot of things both good and bad, but I’ll always be..

Proud, strong and unshakable..

Because I fought to become the person I am now..

And I’m never looking back.

Beef and Broccoli Stir Fry

Ingredients ⤵️

14 oz flank or boneless sirloin steak, cut into strips, raw weight

1/4 cup water

1 tbsp McCormick lower sodium brown gravy mix (3 condiments)

2 tbsps lite soy sauce (2 condiments)

1/4 tsp garlic powder (1/2 condiment)

1/4 tsp freshly ground black pepper (1/2 condiment) 

6.48 oz broccoli florets (cooked from frozen, 2 green)

2.63 oz green bell peppers, sliced (1 green)

2.63 oz red bell peppers, sliced (1 green)

6.34 oz cauliflower rice, cooked from frozen (2 greens)


Directions ⤵️

1. Combine gravy mix, soy sauce, garlic powder, black pepper, and water in a small bowl. Set aside.


2. Spray a large non-stick skillet with cooking spray and heat over medium-high heat. Add steak; cook and stir 3 to 4 minutes or until desired doneness. Do not over cook.


3. Stir in broccoli, peppers, and gravy mixture. Bring to a boil. Reduce heat to low; cover and simmer 5 to 8 minutes or until broccoli is tender crisp. Serve each portion with 1/2 cup grated cauliflower.

Greek Lemon Chicken Salad ๐Ÿฅ— 


Ingredients ⤵️

1 cup (3.66 oz) cucumber, with peel (2 greens)

1 cup (5.26 oz) red bell pepper (2 greens)

1 cup (6.34 oz) tomato (2 greens)

8 black olives (1 healthy fat)

18 oz raw boneless skinless chicken breast~Yields 12 oz cooked (2 leaners)

2 tbsp onion (2 condiments)

1 tsp olive oil (1 healthy fat)

2 tbsp parsley (1/2 condiment)

1 clove garlic (1 condiment)

4 tsp lemon juice (2 condiments)

1/2 oz Non-fat feta cheese (1/2 condiment)


Directions ⤵️

Preheat grill to medium-high heat.

Grill chicken 5 minutes on each side, or until cooked through. Cut into slices.


In a serving bowl, combine parsley, olives, and garlic. Whisk in lemon juice and olive oil. Add cucumber, bell pepper, tomato, and onion. 


Toss to coat w/dressing. Add up to 1 tsp more of lemon juice to taste. Split salad into two servings and place 6oz chicken on top of each salad. Divide feta between the two.

Ingredients ⤵️

- 3 oz grilled chicken breast, chopped

- 2 slices cooked (turkey) bacon, diced

- ½ avocado, diced

- 2 TBSP reduced fat ranch

- ½ cup diced tomatos

- 2 cups chopped romaine lettuce

- 3 slices 2% milk provolone

- cooking spray


Directions ⤵️

- To make the provolone taco shells: Place 1 slice of provolone cheese on a plate prepped with parchment and spayed with cooking spray. Microwave on high for 60 seconds

- Remove from microwave immediately and, if necessary, reform cheese into a circle. Wait 5

seconds for the cheese to cool and then form into a taco shell shape on the edge of a dish or

skinny rolling pin. Let cool until set. Repeat for the remaining 2 slices of cheese.

- To make the filling: Toss the chicken, avocado, bacon, tomatos, ranch, and lettuce to

combine

- Fill the cooled taco shells with the lettuce mixture. Serve any extra as a side-salad.

Lasagna Style Spaghetti ๐Ÿ Squash Recipe Idea

Try this:

Lasagna Style Spaghetti ๐Ÿ Squash 


Ingredients ⤵️

1 spaghetti squash

1 lb ground turkey

2 cups of low carb pasta sauce

2 tablespoons fresh basil

½ cup ricotta cheese

½ cup shredded mozzarella cheese (plus extra for topping)

Olive oil or coconut oil

Himalayan salt & pepper


Directions ⤵️

Roasting the squash - you can cook them in an AIR FRYER at 400 for 20 minutes OR Pre-heat oven to 400 degrees. 


Wash spaghetti squash, cut off stem and slice squash lengthwise. Scoop out the seeds. Brush with oil, season with salt and pepper, and place in baking dish (9×13 works well) with a little water in the bottom of the dish — as the squash cooks, you can add more water if it dries up. 


Roast for 45-60 minutes, depending on squash size, or until inside is soft and easily “fluffs” with a fork. It will look like very tiny spaghetti noodles.


While squash is roasting, brown ground turkey in large skillet over medium heat. Remove turkey from the pan and drain. 


Add sauce to the pan and simmer. Add the turkey to the sauce.


In a bowl, combine the ricotta, mozzarella, and fresh basil, set aside.


When squash is tender, remove from oven and using a fork, scoop, fluff, flake, or scrape, to get the inside of the squash to look like spaghetti noodles. You don’t have to get at ALL of the squash, you can scoop more later when you get to the bottom after it’s been filled and you’re enjoying it for dinner.


Now FILL THEM! Start with a scoop of the red sauce, followed by a layer of the cheese mixture, (you can add extra mozzarella on each layer too!) and repeat the layers until you’ve over filled your squash, ending with a layer of red sauce and then topping them with mozzarella. 


Turn the oven to broil and put them back in to brown up the cheesy top.

Chicken Pot Pie Egg ๐Ÿฅš Muffins


Ingredients ⤵️

• 3 tbsp butter

• 1/2 cup onion, diced (about 2.5 oz)

• 1/2 cup celery, sliced (2 medium ribs)

• 3 cloves garlic, minced

• salt and pepper, to taste

• 18 oz chicken, cubed small

• 1/2 cup low fat plain greek yogurt

• 1/4 cup chicken stock

• 2 tbsp Dijon mustard

• 3/4 cup sharp white cheddar cheese, shredded, divided

• 12 large eggs


Directions ⤵️

1. Heat the butter in a large skillet over medium heat. Once the butter is melted, add the onion, celery, garlic, and a little salt and pepper to the pan. Sautรฉ until the vegetables are soft.

2. Add the chicken to the pan and sautรฉ until it is cooked through.

3. Add the yogurt chicken stock and Dijon mustard to the pan. Bring to a boil over medium-high heat and then reduce heat to low and let simmer for 5-7 minutes.

4. Mix in 1/2 cup of the cheddar cheese and stir until melted.

5. Preheat oven to 350°

6. Crack the eggs into a large mixing bowl and fork whisk. Mix the chicken pot pie mixture into the eggs.

7. Lightly grease a muffin tin and ladle the mixture into each well. Top with remaining cheese.

8. Bake for 25 – 30 minutes.

9. Enjoy ๐Ÿ˜‹

Mongolian Beef ๐Ÿฅฉ over Cauliflower Rice

Ingredients ⤵️

1 pound raw beef round steak, cut into strips - you want 10 oz cooked (2 leans)

5 tbsp low sodium soy sauce (5 condiments)

1 Splenda Packet (1 condiment)

1/2 cup water

1 1/2 cup (4.65 oz) broccoli florets - should yield 1 cup (2 greens) 

2 cups (8.76 oz) fresh, cooked, grated cauliflower (4 greens)


Directions ⤵️


Toss steak with soy sauce and let sit 15 minutes


Spray pan with you olive oil spray and heat on medium/high heat and stir fry beef for about 5 minutes or until browned

Remove from pan. Add broccoli, water, and Splenda. 


Cover and cook 5 minutes or until broccoli is just starting to turn tender, stirring occasionally.


Add beef back in and warm thoroughly.

Serve over grated, cooked cauliflower.
