Avocado Egg Salad

Ingredients ⤵️
2 hard boiled eggs, chopped (2/3 lean)
1 ½ ounces avocado (1 healthy fat)
4 oz plain Greek Yogurt (I use Fage) (1/3 lean)
2 tsp fresh lemon juice (1 condiment)
1 tbsp (.22 oz) chopped green onion (1/8 green)
¼ tsp dijion mustard (1/4 condiment)
1/8 tsp salt (1/2 condiment)
¼ tsp freshly ground pepper (1/2 condiment)
Directions ⤵️
In a medium bowl, combine the hard boiled eggs and egg whites, avocado, Greek yogurt, lemon juice, green onion, and mustard. Mash with a fork. Season with salt and pepper.
Makes 1 serving ⤵️
Per serving: 1 leaner protein, 1 healthy fat, 3 condiments, 1/8 green
