🍅Bruschetta Chicken Casserole 🍅
➡️10 Ingredients:
• 1lb chicken breast, uncooked (*12oz cooked*) cut into bite sized pieces
• 2 tsp avocado or olive oil
• 4.5 c chopped Roma tomatoes
• 3 fresh garlic cloves, chopped
• 1 c shredded reduced fat mozzarella cheese
• 1 tsp dried oregano
• 1 tbsp balsamic vinegar
• Sea salt/pepper to taste
• Fresh basil leaves
• Cooking spray
➡️Instructions:
- Preheat oven to 375 degrees
- Heat oil in skillet on medium-high heat
- Add chicken, salt and black pepper
- Cook, stirring occasionally until golden brown on sides and almost cooked through
- Transfer chicken to an 8 x 8 baking dish (sprayed/brushed with oil)
- Top with chopped tomatoes, oregano, garlic and drizzle of balsamic vinegar
- Sprinkle with mozzarella cheese
- Bake uncovered 18-20 minutes, just until the cheese is melt and sauce bubbling at the bottom of the dish
- Remove from oven and let set for 5 min
- Garnish with basil
