Step aside pasta!
It’s kohlrabi’s time to shine.
It’s a tasty and refreshing treat!!
Chicken Kohlrabi Noodle Soup 🍲 🍜🍲🍜
Ingredients ⤵️
4 soft-boiled eggs, peeled
3 Tbsp reduced-sodium soy sauce, divided
1¼ lb boneless, skinless chicken breast, sliced
2½ lbs kohlrabi
2 c chicken broth
2 scallions, sliced
½ c fresh basil, torn
¼ tsp red pepper flakes
2 Tbsp toasted sesame seeds
1 tsp chili oil
Directions ⤵️
1. Place eggs in Ziploc bag. Add 2 Tbsp soy & marinate for one hour.
2. Combine chicken w/1 Tbsp soy & marinate 30-60 min.
3. Peel the kohlrabi & slice it w/a “spiralizer” or mandolin to make long “noodles.”
4. Bring broth to boil in large pot. Add red pepper flakes, kohlrabi, & chicken. Simmer until tender, ~3-5 min.
5. Stir in basil & scallions.
6. Remove eggs from marinade & cut in half. Arrange equal amounts of kohlrabi, chicken, & broth in 4 bowls. Garnish w/2 half eggs, ½ Tbsp sesame seeds, & ¼ tsp of chili oil per bowl.
