Veggie Sausage and Radish Breakfast Hash
2 Fresh Eggs (2/3 leaner)
2 green servings radishes (73.5g cooked x 2)
1/2 green serving mushrooms (39 g cooked)
1/2 green serving scallions (25 g raw)
2 T Hot Sauce (1 condiment)
Olive Oil 1 t (1 healthy fat)
Parsley as a condiment
Olive oil to pan and cook radishes. Weigh out amount. Mushrooms to pan and weigh out amount. Dice sausage links. Cook sausages and add back in radishes and mushrooms to pan. Sprinkle Parsley. Crack 2 eggs on top and cook to preference. Remove from heat. Top with hot sauce and scallions. Yum.
