Avocado Chicken Salad Lettuce Wraps
Makes 2 servings
Ingredients
3 oz. avocado, peeled and pitted
1 Tbsp sour cream
2 tsp lime juice
1 Tbsp minced fresh cilantro
1 Tbsp minced red onion
1/2 tsp garlic powder
12 oz. cooked boneless skinless chicken breasts, cut into 1/2-in cubes (about 2 cups)
1/8 tsp salt and 1/4 tsp pepper to taste
10 butter lettuce leaves
Mix above ingredients together. (minus the lettuce) Serve on lettuce leaves.
Per serving for program: 1 leaner, 1 healthy fat, 1 green, 3 condiments
