Instant Pot BBQ Pulled Pork with Green Yogurt Slaw
Makes 4 servings
Per serving:
1 lean
3 green
3 condiments
Ingredients:
1 1/2 lb pork tenderloin, cut in half
Cooking spray
1, 12 oz can diet root beer
3 c shredded green cabbage
3 c shredded red cabbage
1/2 c plain low-fat Greek yogurt
1 Tbsp apple cider vinegar
2 tsp lemon juice
1 tsp Dijon mustard
1/4 tsp celery salt
Pinch stevia
1/2 c sugar-free BBQ sauce
Directions:
Spray inside of Instant Pot w/cooking spray. Stet to high saute setting & brown pork pieces on all sides, ~3 min per side.
Add root beer, secure lid, & close pressure valve. Set to 60 min at high pressure. Allow pressure to release naturally before opening.
For the slaw, in a medium bowl, combine the next 8 ingredients.
Transfer pork to a bowl & shred. Add BBQ sauce & toss to combine.
Serve pork topped w/slaw, or separately. You can also serve on Revolution Rolls to make pulled pork sandwiches!
