Searching for something different for dinner this week, and is perfect for the summer ☀️ weather… than I have found a great recipe for you!
Pad Thai Zucchini Noodles

For the peanut π₯ sauce ⤵️
1/2 cup powdered peanut butter
2 tbsp lime juice
1 tbsp lime zest
2 tbsp low sodium soy sauce
2 tsp grated ginger
1/2 tsp red pepper flakes
2-3 tbsp water ( to thin sauce)
For the zucchini noodles ⤵️
4 cups zucchini
2 tsp olive oil
Cooking spray
2 pound raw shrimp, peeled & deveined
1 cup bell pepper, sliced
1/2 cup scallions, chopped
3 whole eggs π₯
1/2 cup bean sprouts
1/2 cup fresh cilantro
2 tbsp black sesame seeds
Directions ⤵️
Combine all peanut sauce ingredients into small bowl, set aside.
Spiralize zucchini noodles
Heat olive oil in skillet over medium-high heat.
Add zoodles to cook and occasionally stir. Cook for 2-3 minutes. Remove zoodles from pan, set aside & drain excess water
Add cooking spray and shrimp to skillet. Cook shrimp for 3-4 minutes until pink.
Add bell peppers and onions to cook for 1-2 minutes until tender. Add eggs, stir in with vegetables until eggs are cooked.
Add zoodles and peanut sauce to skillet and stir for 2 minutes. Then add bean sprouts, sesame seeds & cilantro. Serve immediately
