Creamy Shrimp and Spaghetti Squash
Makes 4 servings
Ingredients:
2 cuo low-sodium chicken broth
12 Swiss garlic and herb laughing cow cheeses
1 cup of water
1 tsp of Old Bay seasoning
28 oz of cooked shrimp
2 cups broccoli, in bite-size pieces
4 cups spaghetti squash
Directions:
Combine the liquid ingredients, cheese, and seasoning in a pot and bring to a boil.
Add the broccoli and cook till tender, add shrimp and toss together.
Plate:
Add one cup of spaghetti squash as your base and pour over 1/4 of the shrimp and cream mixture.
Per serving for program: 1 lean lean, 1 ½ healthy fats, 3 greens,
2 ½ condiments
