Kale, Tomato and Goat Cheese Egg Quiche 🥚🍅🥬
Ingredients:
8 eggs (2 2/3 lean)
2 c. Liquid egg whites (1 leanest)
4 oz. Plain low-fat 2 % Greek yogurt (1/3 lean)
3 oz. non fat goat cheese (3 condiments)
1/2 tsp salt (2 condiments)
1/2 tsp ground pepper (1 condiment)
3 cups (7.1 oz) fresh chopped kale (6 greens)
3 cups (15.78 oz) sliced or chopped Roma tomatoes (6 greens)
Cooking spray
Optional garnish-Parsley
Directions:
Preheat oven to 375. Whisk together eggs, egg whites, Greek yogurt, goat cheese and salt in a large bowl until well mixed. Stir in kale and tomatoes. Pour mixture into mini muffin tins (20-24). Bake 20-25 min at 375 until set. You can make ahead and reheat as needed.
