Party {Fiesta!} Avocado Cups
Makes 3 servings and per serving you receive:
· 3 greens
· 2 healthy fats
· 3 condiments

9oz of avocado
4 cups tomatoes, diced
1/2 cup jalapeno pepper, seeded and minced
1/4 cup chopped fresh cilantro
1 tablespoon red onion, diced
3 tablespoons fresh lime juice
2 tablespoons red wine vinegar (optional)
3 tablespoons hot sauce (optional)
1/4 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper to taste
Mix all ingredients together and place back in avocado shells
