Tuna Salad Stuffed Peppers
Makes 1 serving
Ingredeints:
5oz white tuna in water (2/3 lean)
1 hard boiled egg (1/3 lean)
50g diced celery (1 green)
1 large sweet bell pepper (or 149g) (2 greens)
2 Tbsp lite mayo (1 1/2 healthy fats)
1/4 tsp salt (1 condiment)
1/4 tsp Everything but the bagel seasoning (1 condiment)
1/8 tsp black pepper (1 condiment)
Directions:
Drain tuna and combine all ingredients (except peppers).
Cut pepper in half and remove seeds
Split tuna mixture evenly between pepper halves.
Per serving for program: 1 lean, 1 1/2 healthy fats, 3 greens, 3 condiments.
