Zucchini Fritter with Avocado Dill Dip
Makes 4 servings
Per serving
½ ounce protein
1 vegetable
3 condiments
1 fat
1. 1 large zucchini or 2 small – total weight ¾ pound
2. 1 clove of garlic peeled and minced
3. ¼ Cup fresh basil; we grown our own, but you can find it at any grocery store
4. ¼ cup fresh oregano. Ditto
5. 1 tablespoon lemon zest
6. 2 organic eggs
7. 2 Tbs almond flour
8. ¼ teaspoon Onion powder or to taste
9. 1/2 teaspoon salt
10. ¼ teaspoon of pepper or to taste
Mix all ingredients together use a teaspoon and put in a pan coated with pam flip and brown.remove from pan
Avocado Onion Dip
Ingredients
1. 6 ounces avocado, we prefer Hass avocados - they are tastier
2. ½ teaspoon of onion powder or to taste
3. ½ teaspoon of Vegenaise, available at most health food stores
4. ¼ tsp Salt
5. ½ cup finely chopped dill
Directions
Cut avocado in half, and remove the seed.
Scoop meat with a spoon and place in a bowl.
Add all other ingredients.
Mash until smooth.
