Crustless Turkey Cheddar Quiche

✨ Ingredients
• 6 oz cooked turkey, cubed
• ⅔ cup reduced-fat cheddar cheese
• 1 tbsp light butter
• ¼ cup onion, chopped
• 1 tsp minced garlic
• 1½ cups cooked broccoli florets, finely chopped
• 4 eggs
• ½ cup unsweetened cashew milk
• ¼ tsp salt
• ¼ tsp pepper
✨ Directions
1. Preheat oven to 375°F.
2. Melt butter in a medium skillet over medium-high heat. Add onion and garlic and sauté until onions are translucent.
3. In a 9-inch pie dish, layer turkey → cheese → broccoli.
4. In a bowl, whisk together eggs, cashew milk, salt, and pepper.
5. Pour the egg mixture evenly over the turkey and veggies.
6. Bake 40–45 minutes, or until a knife inserted in the center comes out clean.
7. Let rest 10 minutes before slicing.
