Crispy Tofu with Caramelized Vegetables
Ingredients:
• 30 oz. Mori-nu extra firm tofu
• 1 tbsp low sodium soy sauce
• ¼ tsp garlic powder
• ¼ tsp ground ginger
• 3 tbsp almond flour
• 1 cup broccoli florets
• 1 cup cauliflower florets
• ½ cup radishes, cut in quarters
• 2 scallions, cut into 1-inch pieces
• ¼ tsp kosher salt
Directions:
1. Cut the tofu into 4 slices per serving (8 slices for 4 servings).
2. Place 2 paper towels per serving (4 paper towels for 2 servings) on a plate.
3. Set the tofu slices on top of the plate and cover with more paper towels.
4. Place a cast iron pan or something else that is heavy on top.
5. Let sit for 30 minutes.
6. Remove drained tofu from the paper towels and cut into 1"x1" sized cubes.
7. In a large bowl mix together the soy sauce, garlic powder and ginger.
8. Add the tofu and toss to coat well.
9. Add the almond flour and toss to evenly coat the tofu.
10. Place the tofu in a single layer on one side of a large parchment lined baking sheet.
11. Add the broccoli, cauliflower, radishes and scallions to the other side of the baking sheet.
12. Sprinkle the vegetables with the salt.
13. Place the tofu and vegetables in a 400°F preheated oven and bake for 20 to 25 minutes, tossing the tofu and vegetables halfway.
14. Increase the oven to broil and broil the tofu and vegetables until they are browned and caramelized, about 3 to 5 minutes.
