🍑 Brown Butter Peach Cobbler French Toast with Vanilla Cream Cheese Drizzle! 🤤🍞

Because apparently peach cobbler wasn't already dangerous enough… we had to invite French toast to the party! 😂

Imagine thick, golden slices of buttery brioche French toast, piled high with warm, caramelized peaches, a buttery cinnamon crumble, and a dreamy vanilla cream cheese drizzle.

It's basically breakfast and dessert having a love affair, and frankly, I'm not here to judge. 😏❤️

🛒 What You'll Need

For the French Toast:

  • 6 thick slices of brioche bread

  • 3 large eggs

  • ¾ cup whole milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 2 tablespoons butter

  • Pinch of salt

For the Brown Butter Peaches:

  • 3 ripe peaches, peeled and sliced (or 2 cups drained canned peaches)

  • 4 tablespoons butter

  • ⅓ cup brown sugar

  • ½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • 1 teaspoon vanilla extract

For the Cobbler Crumble:

  • ⅓ cup all-purpose flour

  • ¼ cup brown sugar

  • ¼ cup old-fashioned oats

  • 3 tablespoons cold butter, cubed

  • ½ teaspoon cinnamon

For the Vanilla Cream Cheese Drizzle:

  • 4 ounces cream cheese, softened

  • ¼ cup powdered sugar

  • 2–3 tablespoons milk

  • ½ teaspoon vanilla extract

👩‍🍳 Let's Make Some Breakfast Magic!

1. Get that crumble going!

Preheat your oven to 350°F. Mix the flour, brown sugar, oats, and cinnamon. Cut in the cold butter until crumbly. Spread on a parchment-lined baking sheet and bake for 12–15 minutes, stirring once, until golden. Let cool.

2. Brown that butter, baby! 🧈

Melt 4 tablespoons of butter in a skillet over medium heat, stirring until golden brown and nutty-smelling. Add the peaches, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until tender and caramelized. Stir in the vanilla.

3. French toast time!

Whisk together the eggs, milk, vanilla, cinnamon, and salt. Dip each slice of brioche into the mixture, allowing it to soak briefly on both sides.

Melt a little butter in a separate skillet over medium heat and cook the bread for about 3–4 minutes per side until golden brown and cooked through.

4. Whip up that dreamy drizzle!

Beat the softened cream cheese, powdered sugar, vanilla, and enough milk to make a smooth, pourable glaze.

5. Build your masterpiece! 🍑

Stack your golden French toast, spoon those warm brown butter peaches over the top, sprinkle generously with cobbler crumble, and finish with a glorious drizzle of vanilla cream cheese.

💋 A Little Extra Deliciousness

Want to take it completely over the top? Add a scoop of vanilla bean ice cream if you're serving it for brunch dessert.

Because sometimes breakfast needs to mind its own business and let us live a little. 😂

The verdict? Sweet, buttery, crispy, creamy, and absolutely worth getting out of bed for!

And if somebody tells you this is too much for breakfast, remind them that plain oatmeal is always an option… somewhere else. 🤣❤️
