Spaghetti Squash Pizza Bake!!
Per serving
1 Lean protein
3 Greens
3 condiments
1 large spaghetti squash – use 3 ½ cups cooked squash
1/2 cup shallots or onion, chopped
4 minced garlic cloves
1 ¼ lb. lean grass-fed ground turkey
2 tsp. Italian seasoning
¼ tsp salt
½ tsp pepper or less
10 slices nitrite-free turkey pepperoni
2 eggs
2 cups no sugar added marinara
1/2 cup shredded part-skim mozzarella
fresh chopped basil, for garnish
Note: Cook the meat with the condiments, add the eggs whipped slightly to the sauce and squash. Then stir in the cooked meat, put turkey pepperoni on top and baked for 40 minutes or so at 350 or until bubbling.
Added cheese to top and baked another 15-20 minutes. I did not use onions because I don’t love them.
