Pumpkin Pie Crisp

Ingredients:

- 1/2 cup unsalted butter, melted

- 1 cup packed brown sugar

- 1 cup all-purpose flour

- 1 cup old-fashioned oats

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- 1/4 teaspoon ground ginger

- 1/4 teaspoon salt


For the Filling:

- 1 can (15 ounces) pumpkin puree

- 1 cup granulated sugar

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- 1/4 teaspoon ground ginger

- 2 large eggs

- 1 cup evaporated milk


Directions:

1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

2. In a medium bowl, combine the melted butter, brown sugar, flour, oats, cinnamon, nutmeg, ginger, and salt. Mix until crumbly and set aside.

3. In a large bowl, whisk together the pumpkin puree, granulated sugar, cinnamon, nutmeg, ginger, eggs, and evaporated milk until smooth.

4. Pour the pumpkin mixture into the greased baking dish.

5. Sprinkle the crumbly topping evenly over the pumpkin filling.

6. Bake for 45-50 minutes until the topping is golden brown and the filling is set.

7. Allow the crisp to cool slightly before serving. It's delicious warm or at room temperature!
