These are great for a summertime lunch.
Buffalo chicken lettuce wraps!
1 lean
3 green
3 condiments
1 healthy fat
6oz chicken
1/2 cup bell pepper (chopped)
1/2 cup portabella mushroom (chopped)
3 romain lettuce pieces
2.5 tablespoons buffalo sauce
1.5 tablespoons blue cheese crumbles
1 tablespoon olive oil
•Coat chicken in 2 table spoons of buffalo sauce then cook chicken in oven for 25 minutes at 375 F degrees
•Sauté mushrooms and peppers in olive oil over medium heat
• shred chicken when done
•place chicken and veggies in lettuce boats
•sprinkle blue cheese crumbles and 1/2 tablespoon of buffalo sauce
• ENJOY!
