These SUPER cute veggie boats ⛵ are a great way to get kids to eat their veggies!
Veggie Boats
Makes 1 serving
Per serving:
3 greens
Ingredients:
¾ c bell pepper (any color) sliced in long slices
¾ c cucumber sliced (use mandolin and slice at an angle for a longer “sail”)
Directions:
Slice veggies. Insert a toothpick upright into the pepper slices. Slide a cucumber onto the toothpick, spearing the cucumber twice (like a sail). Enjoy!
