A Fresh, Flavor-Packed Bowl That Tastes Like Summer
If takeout had a baby with a beach vacation, this would be it. π
These Shrimp, Avocado & Mango Bowls are fresh, colorful, packed with flavor, and ridiculously easy to throw together.
You've got juicy seasoned shrimp, sweet mango, creamy avocado, crunchy cucumber and cabbage, fluffy rice, and a creamy spicy sauce that brings the whole party together.
Basically, it's healthy-ish without tasting like you're being punished for eating vegetables. π
And the best part? You can have this on the table in about 30 minutes.
π€ What You'll Need
For the Shrimp
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Juice of ½ lime
For the Bowls
- 2 cups cooked rice — white, brown, jasmine, or cauliflower rice
- 1 ripe avocado, sliced
- 1 mango, diced
- 1 cup shredded purple cabbage
- 1 cup cucumber, diced
- ½ cup fresh cilantro, chopped
- Lime wedges, for serving
- Black or white sesame seeds, optional
For the Creamy Sriracha Sauce
- ½ cup mayonnaise or Greek yogurt
- 1 tablespoon Sriracha, more or less to taste
- 1 teaspoon honey
- 1 teaspoon fresh lime juice
- ¼ teaspoon garlic powder
- Pinch of salt
- 1–2 teaspoons water, if needed to thin
π©π³ Let's Make Some Magic
1. Season the shrimp
Add the shrimp to a bowl and toss with olive oil, garlic, smoked paprika, chili powder, salt, pepper, and lime juice.
Give everything a good toss until the shrimp are nicely coated.
2. Cook the shrimp
Heat a skillet over medium-high heat.
Add the shrimp and cook for about 2–3 minutes per side, depending on their size, until they're pink, opaque, and slightly charred around the edges.
Don't overcook them. Nobody wants shrimp with the texture of a rubber band. π
Remove them from the heat as soon as they're done.
3. Make the sauce
While the shrimp are cooking, whisk together the mayonnaise or Greek yogurt, Sriracha, honey, lime juice, garlic powder, and salt.
Add a splash or two of water until you reach your favorite drizzling consistency.
Taste it.
Want more heat? Add more Sriracha.
Want more sweetness? Add another tiny drizzle of honey.
You're the boss of the sauce.
4. Build your bowls
Start with a generous scoop of rice.
Then arrange your shrimp, mango, avocado, cucumber, and purple cabbage around the bowl.
Sprinkle with fresh cilantro and sesame seeds if using.
5. Drizzle and devour
Drizzle that creamy spicy sauce all over the top.
Add a squeeze of fresh lime.
Then try to take a picture before you destroy it.
I said try. π
πΆ️ Make It Your Own
That's the beauty of a bowl like this—you really can't mess it up.
Try adding:
- π½ Corn
- π« Black beans
- Edamame
- JalapeΓ±o
- Pineapple
- Shredded carrots
- Green onions
- Crispy wonton strips
- Crushed tortilla chips
- Pickled red onions
You can also swap the shrimp for grilled chicken, salmon, tofu, or even steak.
Want it lower-carb? Use cauliflower rice or a bed of greens.
Want more carbs? Add extra rice and call it a day. I don't judge. π
π‘ Meal Prep Tip
If you're making these ahead of time, keep the components separate.
Store the cooked shrimp, rice, vegetables, mango, and sauce individually and assemble when you're ready to eat.
I'd recommend adding the avocado right before serving so it stays fresh.
The shrimp and rice can generally be refrigerated for up to 3 days when stored properly.
