Enter the Roasted Veggie Hummus Bowl.
It's creamy, crunchy, savory, colorful, loaded with roasted vegetables, and ridiculously customizable.
Basically, it's a little Mediterranean vacation in a bowl—without the airfare. πΏ✈️
π₯ ROASTED VEGGIE HUMMUS BOWL
π WHAT YOU'LL NEED:
For the roasted veggies:
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 small red onion, sliced
- 1 cup broccoli florets
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon Italian seasoning
- Salt & black pepper to taste
For the bowl:
- ½–¾ cup hummus
- Cooked quinoa, brown rice, or couscous
- Fresh cucumber, chopped
- Kalamata olives
- Crumbled feta cheese
- Fresh parsley
- Lemon wedges
Optional but highly recommended:
- Avocado π₯
- Pickled red onions
- Toasted pita
- A sprinkle of pumpkin or sunflower seeds
- A drizzle of tzatziki
π₯ LET'S GET ROASTING!
Preheat your oven to 425°F.
Throw your zucchini, peppers, onion, broccoli, and tomatoes onto a sheet pan.
Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, Italian seasoning, salt, and pepper.
Toss everything together until those veggies are nicely coated.
Roast for about 20–25 minutes, tossing halfway through, until they're tender with those delicious little caramelized edges.
And honestly…
Those crispy edges are where the magic happens. π€
π₯ BUILD YOUR BOWL
Start with a scoop of quinoa, rice, or couscous.
Then add a generous pile of those gorgeous roasted veggies.
Now comes the important part:
HUMMUS.
Don't be shy.
Spoon a big dollop right in the middle and spread it around a little.
Then pile on:
π₯ Fresh cucumber
π« Kalamata olives
π§ Feta
π₯ Avocado
πΏ Fresh parsley
Finish with a squeeze of fresh lemon and, if you're feeling fancy, a drizzle of tzatziki.
πΆ️ WANT TO TAKE IT UP A NOTCH?
Mix together:
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- ½ teaspoon honey
- ½ teaspoon Dijon mustard
- A pinch of garlic powder
- Salt & pepper
Drizzle it over the whole thing.
