And then there’s crispy, sticky, sweet-and-savory salmon sitting on a bed of fluffy rice with creamy avocado, crunchy cucumber, edamame and a spicy Sriracha mayo drizzle. π

These Crispy Salmon Rice Bowls are one of those meals that look like you put in WAY more effort than you actually did. The salmon gets tossed in sesame oil and teriyaki glaze, roasted until tender, then finished under the broiler for those gorgeous crispy, caramelized edges.
Basically: restaurant vibes without the restaurant bill. π
And that Sriracha mayo? Don't skip it. It brings just enough creamy heat to make the whole bowl ridiculously good.

π What You'll Need
- 1 lb. skinless center-cut salmon fillet, cut into 1½-inch chunks
- 1 tablespoon sesame oil
- ¼ cup teriyaki glaze, preferably low-sodium
- 2 cups hot cooked brown rice
- 1 cup cooked shelled edamame
- 2 scallions, sliced
- 1 cup diced cucumber
- 1 medium avocado, sliced
- 2 tablespoons Sriracha mayonnaise
- 2 teaspoons toasted sesame seeds, optional

1. Get that salmon crispy!
Preheat your oven to 450°F. Line a large rimmed baking sheet with foil and coat with cooking spray.
Toss the salmon pieces with sesame oil and arrange them on the baking sheet. Roast for about 6 minutes, until the salmon is opaque on the outside.
Remove from the oven, switch the broiler to high, and drizzle the salmon with the teriyaki glaze. Toss to coat.
Broil for 2–3 minutes, until the salmon is browned, crispy and cooked through.
Pro tip: Keep an eye on it under the broiler. That sweet teriyaki glaze can go from beautifully caramelized to “well, that's charcoal” surprisingly fast. π
2. Build your bowl.
While the salmon cooks, combine the hot brown rice, edamame and sliced scallions. Divide among four bowls.
3. Add the good stuff.
Top each bowl with cucumber, avocado and those crispy teriyaki salmon bites.
Drizzle with the remaining glaze and Sriracha mayo, then sprinkle with toasted sesame seeds if you're feeling fancy.

Want more heat? Add extra Sriracha.
Not a salmon fan? This bowl would also be delicious with chicken or shrimp.
Want more crunch? Toss on some shredded carrots, cabbage or crispy wonton strips.
And if you can't find Sriracha mayo, just mix mayonnaise with Sriracha until it reaches your preferred level of “I may have made a mistake… but it's a delicious mistake.” π
