🍋🍕 Lemon Ricotta Pizza with Crushed Thyme & Honey Drizzle

Bright, creamy, herby, slightly sweet, and completely addictive. Basically, pizza decided to put on linen pants and pretend it has its life together. 😂

If you're looking for a pizza that feels a little fancy without requiring a culinary degree or three hours of your life, this is it.

Creamy ricotta gets spread over a crisp pizza crust, then topped with fresh lemon zest, fragrant thyme, melty mozzarella, and a little Parmesan. Once it comes out of the oven, it gets finished with a golden honey drizzle and another hit of lemon.

The result?

Creamy + crispy + tangy + herby + sweet = pizza perfection.

And yes, you absolutely should eat it standing over the counter while telling yourself you're "just having one more piece." We both know how this ends. 😉

🛒 Ingredients

For the Pizza

  • 1 pound pizza dough, homemade or store-bought
  • 1 cup whole-milk ricotta
  • 1 cup shredded low-moisture mozzarella
  • ¼ cup finely grated Parmesan
  • 1 lemon
  • 1 tablespoon fresh thyme leaves, lightly crushed
  • 1 tablespoon extra-virgin olive oil
  • 1 small garlic clove, finely grated or minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • ½ teaspoon red pepper flakes, optional

For the Honey Drizzle

  • 2 tablespoons honey
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon fresh thyme leaves
  • Pinch of flaky sea salt

Optional Finishing Touches

  • Extra lemon zest
  • Freshly cracked black pepper
  • A sprinkle of Parmesan
  • Flaky sea salt
  • A tiny pinch of red pepper flakes for a sweet-and-spicy situation 🌶️

👩‍🍳 Let's Make Some Pizza!

1. Get That Oven HOT 🔥

Preheat your oven to 475°F.

If you have a pizza stone or steel, put it in the oven while it preheats. A hot surface is the secret to getting that beautifully crisp bottom without turning the crust into cardboard.

Let the dough sit at room temperature for about 20–30 minutes before stretching. It’ll be much easier to work with.

2. Make the Ricotta Mixture

In a bowl, combine:

  • Ricotta
  • Parmesan
  • Garlic
  • Olive oil
  • Lemon zest from about half the lemon
  • Salt
  • Black pepper
  • Red pepper flakes, if using

Mix until creamy and smooth.

Now take your fresh thyme and lightly crush it between your fingers before adding it.

This releases those fragrant oils and makes the thyme flavor much more noticeable.

3. Stretch That Dough

Place the dough on a lightly floured surface and stretch it into roughly a 12-inch circle.

Don't stress about making it perfectly round.

Rustic is fancy.

Or at least that's what we tell ourselves when our pizza looks suspiciously like the state of Michigan. 😂

Transfer it to parchment paper or a lightly oiled pizza peel.

4. Build Your Pizza

Spread the ricotta mixture over the dough, leaving about a ½-inch border around the edge.

Sprinkle the mozzarella evenly over the top.

Add a little extra lemon zest and another sprinkle of thyme.

Don't drown it in toppings. This pizza is all about letting those simple flavors shine.

5. Bake

Slide the pizza onto your hot stone, steel, or baking sheet.

Bake for approximately 10–14 minutes, or until:

  • The crust is golden and crisp
  • The cheese is melted
  • The edges are beautifully browned

If you like an extra blistered crust, give it another minute or two under the broiler—but watch it like a hawk.

Pizza goes from “gorgeous artisanal masterpiece” to “well, I guess we're ordering Chinese” very quickly under a broiler. 😂

6. Make the Honey Drizzle 🍯

While the pizza bakes, stir together:

  • Honey
  • Lemon juice
  • Thyme
  • Pinch of flaky sea salt

Set aside.

7. The Best Part

When the pizza comes out of the oven, immediately drizzle that honey mixture over the top.

Finish with:

✨ Fresh lemon zest
✨ Fresh thyme
✨ Cracked black pepper
✨ Flaky sea salt
✨ A little Parmesan

Then slice it.

And try not to eat the entire thing before anyone else gets a piece.

🍋 Why This Pizza Works

The ricotta gives you creamy richness without making the pizza heavy.

The lemon cuts through that richness and keeps everything bright.

The thyme brings an earthy, almost floral flavor.

The honey adds just enough sweetness to make everything ridiculously good.

And the mozzarella?

Well, mozzarella is mozzarella.

It showed up. It melted. It did its job. We respect that. 😂

💡 Kitchen Tips

Use whole-milk ricotta.
It makes the topping creamier and richer.

Don't skip the lemon zest.
The zest gives you concentrated lemon flavor without adding too much moisture.

Crush your thyme.
A quick rub between your fingers releases its oils and wakes up the flavor.

Use a hot baking surface.
The hotter the surface, the better your crust.

Drizzle the honey AFTER baking.
This keeps the honey bright and prevents it from burning.

Want some heat?
Add red pepper flakes to the ricotta or honey drizzle. Sweet + spicy + lemony is a ridiculously good combination.

🥂 What to Serve With It

This pizza is perfect with a simple:

  • Arugula salad with lemon vinaigrette
  • Crisp cucumber salad
  • Roasted asparagus
  • Tomato and basil salad
  • Glass of chilled white wine

Or honestly?

Just make the pizza.

You don't always need a side dish when the pizza is the main character. 🍕👑

❤️ Final Bite

This Lemon Ricotta Pizza is proof that pizza doesn't always need to be loaded down with seventeen toppings and enough meat to qualify as a livestock situation.

Sometimes all you need is:

Creamy ricotta.
Bright lemon.
Fresh thyme.
A little mozzarella.
A drizzle of honey.

Simple ingredients.

Big flavor.

Zero boring bites.

And possibly a new addiction.

You've been warned. 🍋🍕🍯
