๐ŸŒฎ๐Ÿฅž Taco Pancakes: Because Apparently Tacos Needed a Breakfast Career

 



Tacos. Pancakes.

Two foods that have absolutely no business being in the same sentence…

and yet here we are.

And honestly? I regret nothing. ๐Ÿ˜‚

These Easy Taco Pancakes are the perfect mash-up of fluffy pancakes, seasoned taco meat, gooey cheese, and all your favorite taco toppings.

They're fun enough for a weekend breakfast, easy enough for a weeknight dinner, and guaranteed to make somebody at the table say:

“Wait… WHAT are we eating?”

Followed immediately by:

“Can I have another one?”

๐ŸŒฎ What You’ll Need

For the Pancakes

  • 1 cup all-purpose pancake mix
  • ¾ cup milk
  • 1 egg
  • 1 tablespoon melted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • Optional: pinch of cayenne if you like a little kick

For the Taco Filling

  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¼ cup water
  • 1 cup shredded Mexican-blend or cheddar cheese

For the Toppings

Pick your favorites because tacos have no judgment.

  • Sour cream
  • Salsa
  • Diced tomatoes
  • Diced onions
  • Shredded lettuce
  • Sliced jalapeรฑos
  • Avocado or guacamole
  • Extra shredded cheese
  • Fresh cilantro
  • Crushed tortilla chips

๐Ÿฅž Step 1: Make the Taco Meat

Brown the ground beef in a skillet and drain off the excess grease.

Add the taco seasoning and water.

Stir it all together and let it simmer for a few minutes until the meat is nicely seasoned and most of the liquid has cooked off.

Try not to eat half of it straight from the pan.

I said try. I didn't say succeed. ๐Ÿ˜‚

๐Ÿฅž Step 2: Make Those Taco Pancakes

In a bowl, combine your pancake mix, milk, egg, melted butter, garlic powder, chili powder, and cumin.

Stir until just combined.

Don't beat the batter into submission.

A few little lumps are perfectly fine.

Heat a lightly greased skillet or griddle over medium heat.

Pour about ¼ cup of batter onto the skillet for each pancake.

Cook until bubbles form on top and the edges look set.

Flip.

Cook the other side until golden brown.

Congratulations.

You have made a pancake.

But we're not done because this pancake is about to get promoted.

๐ŸŒฎ Step 3: Build Your Taco Pancake

Place one pancake on a plate.

Sprinkle it with shredded cheese while it's still warm so the cheese gets all melty and glorious.

Add a spoonful of taco meat.

Top with another pancake.

Then repeat.

Basically, we're creating a taco pancake stack.

Think pancake tower.

Think taco lasagna.

Think…

“I absolutely did not need this much cheese, but I'm not mad about it.”

๐Ÿง€ Step 4: Go Completely Overboard With the Toppings

Now comes the fun part.

Add sour cream, salsa, tomatoes, onions, jalapeรฑos, avocado, cilantro, and whatever else your taco-loving heart desires.

For extra crunch, sprinkle crushed tortilla chips over the top.

Want it spicy?

Add hot sauce.

Want it cheesy?

Add more cheese.

Want to pretend it's healthy?

Throw some lettuce on it.

Use frozen pancakes or refrigerated pancake batter.

Nobody needs to know.
