THIS Halloween, we’re making tacos.

But not just any tacos…

We’re talking crispy, cheesy, juicy birria tacos dunked into a rich, spicy consommé that we're officially calling Witch’s Brew. 🧙‍♀️🔥

Because apparently regular taco night wasn't dramatic enough.

And let me warn you right now:

These tacos may cause uncontrollable dipping, excessive cheese consumption, and questionable decisions after the third one.

🎃 The Magic Behind the Tacos

The secret to these tacos is the birria.

Tender beef is slow-cooked with dried chiles, garlic, onion, cumin, oregano, smoked paprika, and a few other magical ingredients until the meat is so ridiculously tender it practically falls apart when you look at it.

Then comes the fun part.

You take your tortilla and give it a quick dip into that gorgeous, red, flavorful birria broth.

Then straight into a hot skillet.

Add shredded beef.

Add a very irresponsible amount of cheese.

Fold it.

Crisp it until golden.

And then serve it with a little bowl of that delicious Witch's Brew for dipping.

🧙‍♀️ Witch's Brew Birria Tacos

Ingredients

For the Birria

  • 2 lbs beef chuck roast, cut into large chunks
  • 1 onion, roughly chopped
  • 4 garlic cloves
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon cinnamon
  • Salt and black pepper, to taste
  • 4 cups beef broth
  • 1 tablespoon oil

For the Tacos

  • Small corn tortillas
  • 2 cups shredded Oaxaca, mozzarella, or Monterey Jack cheese
  • 1 cup chopped white onion
  • ½ cup fresh cilantro
  • Lime wedges
  • Reserved birria consommé

🔥 Let's Make Some Magic

1. Make the Birria

Heat the oil in a large pot or Dutch oven.

Season your beef generously with salt and pepper and sear it on all sides until beautifully browned.

Add the onion, garlic, dried chiles, cumin, oregano, smoked paprika, cinnamon, and beef broth.

Bring everything to a simmer.

Cover and cook for about 2½–3 hours, or until the beef is ridiculously tender and practically falling apart.

You can also make this in a slow cooker if you'd rather let the witch's assistant do the work. 😉

2. Shred That Beef

Remove the beef from the pot and shred it with two forks.

Don't throw away that broth!

THAT is the Witch's Brew.

Strain the broth if desired and keep it warm for dipping.

3. Build Your Tacos

Heat a skillet over medium-high heat.

Take a tortilla and give it a quick dip into the birria broth.

Not a bath.

We're making tacos, not giving the tortilla a spa day. 😂

Place it in the hot skillet.

Add a generous pile of shredded beef and cheese.

Fold the tortilla over and cook until crispy and golden.

Flip and crisp the other side.
