Creamy Spinach & Eggs — Because Toast Deserves Better 🍳🌿

 


Some mornings call for cereal.

Other mornings call for creamy, garlicky spinach with perfectly cooked eggs and enough Parmesan to make you temporarily forget your responsibilities. 😂

And the best part? This looks like something you'd pay $17.95 for at a cute little brunch place where they serve water in mason jars.

Meanwhile, you made it in one skillet.

🍳 Creamy Spinach & Eggs

Ingredients:

  • 1 tablespoon butter

  • 2 cloves garlic, minced

  • 5–6 cups fresh baby spinach

  • ½ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • 4 large eggs

  • ¼ teaspoon onion powder

  • Salt and black pepper, to taste

  • Pinch of red pepper flakes, optional

  • Extra Parmesan for the top

  • Toasty bread for serving — highly recommended because we are not wasting that sauce

👩‍🍳 Let's Make It

Melt the butter in a large skillet over medium heat.

Add the garlic and cook for about 30 seconds, just until fragrant. We're looking for “Ohhhh, that smells good” — not cremated garlic.

Add the spinach a handful at a time and cook until wilted.

Pour in the heavy cream, then stir in the Parmesan, onion powder, salt, pepper, and red pepper flakes if you're feeling a little spicy.

Let everything simmer gently for 2–3 minutes until the sauce starts getting creamy and delicious.

Now make four little wells in the spinach mixture and crack an egg into each one.

Cover the skillet and cook for about 4–7 minutes, depending on how you like your eggs. Keep an eye on them—you want the whites set while those yolks stay gloriously dippable if that's your thing.

Finish with another sprinkle of Parmesan and some freshly cracked black pepper.

Serve immediately with warm, crusty toast.

And YES, dipping the toast directly into that creamy spinach and runny yolk situation is mandatory.

💡 Mortgage Mama's Kitchen Tip

Want to make it even more ridiculous?

Add crispy bacon, sautéed mushrooms, chopped sun-dried tomatoes, or a little mozzarella on top.

Want it lighter? Swap the heavy cream for half-and-half. It won't be quite as rich, but it'll still get the job done.

Either way, this is proof that eggs don't have to spend their entire lives scrambled next to a piece of toast.

Sometimes they deserve a glow-up too. 😏🍳
