Because Even Dinner Deserves a Halloween Costume! ๐
Who says pumpkins have to be carved and left on the porch? This Halloween, we're carving PEPPERS and stuffing them with gooey, cheesy, creamy deliciousness! ๐คค๐ง
These adorable little Jack-O'-Lanterns are filled with homemade mac and cheese, and they're almost too cute to eat. ALMOST! ๐
Perfect for Halloween dinner, spooky parties, or getting those picky little monsters to eat something besides candy! ๐ฌ๐
๐ Ingredients (Makes 4 Jack-O'-Lanterns)
๐ For the Pumpkin Peppers:
4 medium orange bell peppers
1 tablespoon olive oil
Salt and pepper, to taste
๐ง For the Creamy Mac & Cheese:
8 oz elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
1½ cups whole milk
1½ cups shredded sharp cheddar cheese
½ cup shredded mozzarella
¼ teaspoon garlic powder
¼ teaspoon paprika
Salt and pepper, to taste
¼ cup extra cheddar for topping
๐ฉ๐ณ Let's Get Spooky in the Kitchen!
1. Carve Your Little Pumpkins! ๐
Preheat your oven to 375°F.
Slice the tops off the orange bell peppers and remove the seeds and membranes. Carefully carve little triangle eyes, noses, and silly toothy smiles into the sides using a small sharp knife.
Brush the peppers lightly with olive oil, season with salt and pepper, and place them upright in a baking dish.
Bake for 10–12 minutes to soften them slightly.
2. Cook That Macaroni! ๐
Boil the elbow macaroni in salted water until just al dente. Drain and set aside.
3. Make the Cheesy Magic! ๐ง
Melt butter in a saucepan over medium heat. Whisk in flour and cook for about one minute.
Slowly whisk in the milk until smooth. Stir for 3–5 minutes until slightly thickened.
Reduce heat to low and add cheddar, mozzarella, garlic powder, paprika, salt, and pepper.
Stir until you've got a creamy, dreamy cheese sauce!
Fold in the cooked macaroni.
And yes, tasting a spoonful is absolutely mandatory. Chef's rules! ๐
4. Stuff Those Spooky Faces! ๐ป
Spoon the creamy mac and cheese into each carved pepper.
Pile it high and sprinkle extra cheddar on top.
Return to the oven for 10–15 minutes, until the peppers are tender and the cheese is bubbly.
5. Serve Your Little Monsters! ๐
Let them cool slightly before serving. Place the pepper tops beside them like tiny pumpkin hats!
Watch the kiddos light up when they see their very own edible Jack-O'-Lantern!
๐ก Spooky Little Kitchen Tricks!
๐ป Make it extra creamy: Add 2 tablespoons of cream cheese to your cheese sauce.
๐ฆ Add some protein: Mix in finely chopped cooked chicken or ham.
๐ Picky eater alert: Let the kids scoop out the mac and cheese if they're not quite ready to eat the pepper. Baby steps, people! ๐
๐งก Party shortcut: Prepare the peppers and macaroni ahead of time, refrigerate separately, and assemble before baking. Heat until hot throughout.
๐ The Final Bite!
These cheesy little pumpkins are proof that Halloween dinner doesn't have to involve complicated recipes, expensive ingredients, or a kitchen that looks like a crime scene. ๐
Just a few orange peppers, a whole lot of cheese, and a little Halloween magic!
Because the only thing scarier than Halloween is running out of mac and cheese! ๐ง๐คฃ๐ป
