Because sometimes dinner needs to be a little trashy… but in a classy casserole dish.

If tacos, nachos, and cheesy casserole had a baby… this would be it. ๐Ÿ˜

This Cheesy Dorito Taco Beef Bake is loaded with seasoned ground beef, rice, salsa, melty Mexican cheese, and crunchy Nacho Cheese Doritos—all baked together into one ridiculously comforting meal.

And here's the sneaky little secret: Greek yogurt + salsa makes the casserole creamy without needing a mountain of sour cream and cheese.

Oh…and there's zucchini in it.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced

  • 1 packet taco seasoning
  • 1 cup salsa
  • ½ cup plain Greek yogurt
  • 1 cup shredded Mexican-blend cheese
  • 1 small bag Nacho Cheese Doritos
  • 1 cup cooked rice, white or brown
  • Avocado, cilantro and lime for topping (optional)

1. Brown the beef

Preheat your oven to 375°F.

In a large skillet, brown the ground beef with the diced onion and bell pepper.

If you're using zucchini, toss it in once the beef is mostly cooked and sautรฉ everything together until the veggies are tender.

Drain any excess grease.

2. Make it taco-y

Add the taco seasoning and stir to combine.

Then add the salsa and cooked rice.

There are basically no rules.
