Looking for a Halloween dinner that’s festive, easy, filling, and actually tastes good? Forget the candy for a minute—these little edible jack-o’-lanterns are bringing the spooky to dinner! π»π
And let's be honest…if you're going to spend time carving something, it might as well be something you can eat afterward. π
π Jack-O’-Lantern Stuffed Peppers
Ingredients:
- 6 orange bell peppers
- 1 lb. ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup shredded Mexican or cheddar cheese
- 1 can diced tomatoes, drained
- 1 cup tomato sauce
- 1 tsp. Italian seasoning
- ½ tsp. garlic powder
- Salt & pepper to taste
- Optional: red pepper flakes for a little kick πΆ️
π» Directions:
1. Preheat your oven to 375°F.
2. Prep your pumpkins.
Cut the tops off the peppers and remove the seeds and membranes. Using a small sharp knife, carefully carve little jack-o’-lantern faces into the front. Don't get too fancy—these are peppers, not the Sistine Chapel. π
3. Make the filling.
Brown the ground beef with the onion and garlic. Drain any excess grease, then stir in the tomatoes, tomato sauce, cooked rice, seasonings, and about half of the cheese.
4. Stuff those little pumpkins! π
Fill each pepper with the mixture and place them upright in a baking dish. Add a little water or broth to the bottom of the dish to help keep them from drying out.
5. Bake.
Cover loosely with foil and bake for about 30 minutes. Remove the foil, sprinkle with the remaining cheese, and bake another 10–15 minutes, until the peppers are tender and the cheese is melted.
6. Add the tops and serve!
Put the little pepper tops back on for the full jack-o’-lantern effect.
π·️ Make Them Extra Spooky
Want to have a little fun with them?
- Use black olives for creepy “eyes” or spider decorations.
- Add a little sour cream “web.”
- Make the filling spicy and call them “Hell-O’-Lantern Peppers.” ππ₯
- Serve with tortilla chips, guacamole, or a spooky Halloween salad.
These are perfect for a Halloween family dinner, Halloween party, or just a random October night when you decide regular dinner is boring.
Because sometimes you need to look at your dinner and think:
“Yep. I carved a face into my food today. Life is good.” ππ
Save this recipe for Halloween! π»π§‘
