๐ŸŽƒ Mummy’s Got a Sweet Tooth: Pumpkin Cheesecake Cinnamon-Swirl Bread


 


Halloween baking should have three requirements:

  1. It needs to taste amazing.
  2. It needs to look cute enough that people think you worked much harder than you actually did.
  3. It should involve absolutely zero requirement to possess professional pastry-chef skills. ๐Ÿ˜‚

Pumpkin Cheesecake Cinnamon-Swirl Mummy Bread.

We're talking soft, warmly spiced pumpkin bread with a buttery cinnamon-brown-sugar swirl, a creamy cheesecake layer hiding in the middle, and vanilla glaze drizzled across the top like mummy bandages.

Then we slap two candy eyeballs on it and suddenly we're Martha Stewart.

Well…

Martha Stewart after two cups of coffee and a trip through the Halloween aisle at Target. ๐Ÿ˜‚

๐Ÿ›’ What You'll Need

For the Pumpkin Bread:

  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup pumpkin purรฉe — not pumpkin pie filling
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl:

  • ⅓ cup brown sugar
  • 1½ teaspoons cinnamon
  • 2 tablespoons melted butter

For the Cheesecake Filling:

  • 8 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla

For Our Mummy Situation:

  • 1 cup powdered sugar
  • 1–2 tablespoons milk
  • ½ teaspoon vanilla
  • Candy eyeballs

๐Ÿ‘ป Let's Make This Little Monster

Preheat your oven to 350°F and grease a 9x5-inch loaf pan. I also recommend lining it with parchment paper so you can lift your masterpiece out without performing emergency loaf surgery.

In one bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg and cloves.

In another larger bowl, whisk the eggs, white sugar, brown sugar, pumpkin, oil, milk and vanilla until smooth.

Gradually stir the dry ingredients into the pumpkin mixture.

Do not overmix. We're making tender pumpkin bread, not constructing a retaining wall.

Make the Cheesecake Layer

Beat the softened cream cheese, sugar, egg and vanilla until creamy.

Try not to eat it with a spoon.

Make That Cinnamon Swirl

Mix the brown sugar, cinnamon and melted butter together.

Your kitchen should now smell suspiciously close to happiness.

๐ŸŽƒ Time to Assemble

Pour roughly half of the pumpkin batter into your loaf pan.

Spoon the cheesecake mixture over it, keeping it mostly away from the very edges.

Drizzle or spoon about half of your cinnamon mixture over the cheesecake.

Add the remaining pumpkin batter.

Finish with the remaining cinnamon mixture and gently swirl the very top with a butter knife.

Don't go crazy swirling everything together—we want distinct little pockets of cinnamon goodness.

⏰ Bake It

Bake for approximately 60–70 minutes, checking around the 55-minute mark.

Because there's cheesecake in the center, a toothpick may not come out perfectly dry. You're looking for the pumpkin bread portion to be baked through and the center to feel set rather than jiggly.

If the top starts getting too brown, loosely cover it with foil.

Let it cool in the pan for about 20 minutes before transferring it to a rack.

Then—and I know this is deeply offensive—

LET IT COOL COMPLETELY.

Otherwise our mummy is going to experience a glaze-related medical emergency. ๐Ÿ˜‚

๐Ÿ‘€ Turn It Into a Mummy

Whisk together the powdered sugar, vanilla and enough milk to create a thick but drizzleable glaze.

Put it into a piping bag or a zip-top bag and snip off one tiny corner.

Now drizzle the glaze back and forth diagonally across the loaf, overlapping the lines so they resemble mummy bandages.

Leave a little opening near the upper portion and place two candy eyes peeking through.

And LOOK AT YOU.

You made an adorable edible mummy.

๐Ÿงก The Best Part?

Slice into it and you've got:

๐ŸŽƒ Moist pumpkin bread
๐ŸคŽ Gooey cinnamon-brown-sugar swirls
๐Ÿค Creamy cheesecake filling
๐Ÿ‘ป Sweet vanilla glaze

It's basically pumpkin bread, cinnamon rolls and cheesecake dressed up in a Halloween costume together.

Serve it slightly chilled or at room temperature with coffee, hot apple cider or a cold glass of milk.

And because of the cream cheese filling, store leftovers covered in the refrigerator for up to about 4 days.

Although calling them “leftovers” feels wildly optimistic.

๐ŸŽƒ One Final Halloween Warning…

If you're taking this to a party, bake sale, office or family gathering, be prepared for everyone to ask:

“OMG, did YOU make this?!”

The appropriate response is:

“Oh, this little thing? Yeah.”

Then casually walk away.

They don't need to know the mummy was basically pumpkin bread wearing icing and googly eyes. ๐Ÿ˜‚๐ŸŽƒ๐Ÿ‘ป
