Stuffed Meatloaf with Spinach, Feta, and Melted Swiss Cheese 🍖🧀 – A recipe that everyone in my family can’t get enough of!
This stuffed meatloaf takes a comforting classic to the next level with a delicious filling of spinach, feta, and melty Swiss cheese. The combination of savory beef, tangy feta, and gooey Swiss makes this meatloaf a showstopper at dinner time. You’ll love how flavorful and satisfying this dish is!
Ingredients:
Ground Beef: 1 ½ lbs (use lean for a healthier option)
Breadcrumbs: 1 cup (helps bind the meatloaf together)
Large Egg: 1 (holds everything together)
Spinach: 1 cup, cooked and chopped (use fresh or frozen)
Feta Cheese: ½ cup, crumbled (adds a tangy kick)
Swiss Cheese: 1 cup, shredded (for that melty, cheesy center)
Onion: 1 small, finely chopped (adds flavor and moisture)
Garlic: 2 cloves, minced (because garlic makes everything better!)
Worcestershire Sauce: 1 tablespoon (for depth of flavor)
Dried Oregano: 1 teaspoon (adds a touch of herbal goodness)
Salt & Pepper: 1 teaspoon salt, ½ teaspoon black pepper (season to taste)
Ketchup: ½ cup (classic topping for meatloaf)
Instructions:
1. Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
2. Prepare the meatloaf mixture:
In a large bowl, combine the ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, oregano, salt, and pepper. Mix until everything is well incorporated, but don’t overmix to keep the meatloaf tender.
3. Prepare the filling:
In a separate bowl, combine the cooked and chopped spinach, crumbled feta cheese, and shredded Swiss cheese.
4. Assemble the meatloaf:
Divide the meatloaf mixture into two portions. Press one portion of the mixture evenly into the bottom of the prepared loaf pan.
Create a shallow indentation down the center of the meat, then add the spinach, feta, and Swiss cheese filling, spreading it out evenly.
Top with the remaining meatloaf mixture, sealing the edges to enclose the filling completely.
5. Add the topping:
Spread the ketchup evenly over the top of the meatloaf.
6. Bake the meatloaf:
Bake in the preheated oven for 55-65 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F/70°C).
7. Rest and serve:
Let the meatloaf rest for 5-10 minutes before slicing to allow the juices to redistribute. Serve with your favorite sides and enjoy the cheesy, flavorful goodness!
