Grilled Cheese with Gouda, Roasted Mushrooms, and Onions
Ingredients:
- 8 ounces of sliced mushrooms
- 1 medium onion (the sweeter, the better), sliced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
- 4 tablespoons of butter
- 4 slices of your favorite bread
- 1 cup of shredded gouda cheese
Directions:
1. Preheat your oven to 400°F (200°C).
2. On a baking sheet, toss the sliced mushrooms and onion with olive oil. Add a pinch of salt and pepper. Roast them in the oven for about 20 minutes, or until they’re cooked to your liking.
3. In a skillet over medium heat, melt the butter (4 tablespoons) until bubbly.
4. While the butter melts, start to build your sandwiches. On one slice of bread, add a layer of shredded gouda cheese, then pile on the roasted mushrooms and onions, followed by another layer of gouda. This helps keep everything together! Season with a bit more salt and pepper. Top with another slice of bread and press down lightly.
5. In the melted butter, quickly dip one sandwich for a second, then flip it over into the skillet. Do the same with the second sandwich. Cook for about 2 minutes on one side, until it's lightly browned.
6. Carefully flip the sandwiches over and cook for another 2-3 minutes, or until the cheese is melted and the other side is golden and crispy.
