This hearty Shepherd’s Pie Soup combines all the delicious flavors of the classic dish, with ground beef, crispy bacon, creamy mashed potatoes, and a rich broth. It's a comforting, filling soup that's perfect for chilly evenings!


Ingredients:


For the Soup:

1 lb ground beef

6 slices bacon, chopped

1 large onion, chopped

3 cloves garlic, minced

4 cups beef broth

2 cups heavy cream

2 cups frozen peas and carrots (or fresh if preferred)

1 cup frozen corn (optional)

1 teaspoon dried thyme

1 teaspoon Worcestershire sauce

Salt and pepper to taste


For the Mashed Potato Topping:

3 large potatoes, peeled and cubed

1/4 cup butter

1/2 cup sour cream

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional)


For Garnish:

Sour cream (optional)

Fresh parsley or green onions (optional)


Instructions:


Prepare the Mashed Potatoes:

In a medium pot, bring the cubed potatoes to a boil in salted water. Cook until tender, about 10-15 minutes.

Drain the potatoes and return them to the pot. Mash the potatoes with butter and sour cream until smooth. Season with salt and pepper to taste. Set aside.


Cook the Soup Base:

In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pot.

Add the ground beef to the pot and cook until browned. Drain excess fat if necessary.

Add the chopped onion and garlic to the pot and cook for 3-4 minutes, until softened.


Make the Soup:

Add the beef broth, heavy cream, frozen peas, carrots, and corn (if using). Stir in the Worcestershire sauce and dried thyme. Bring to a simmer, and let it cook for 10-15 minutes, allowing the flavors to meld together.

Season with salt and pepper to taste.


Combine and Serve:

Once the soup is ready, ladle it into bowls. Spoon a generous portion of mashed potatoes on top of each bowl of soup.

Sprinkle the crispy bacon on top and add shredded cheddar cheese if desired.

Garnish with a dollop of sour cream and fresh parsley or green onions for added flavor.
