Spaghetti Squash Carbonara Recipe Idea

 


Ingredients:
3 cups spaghetti squash, cooked (6 Greens)
2 eggs, whisked thoroughly (2/3 Lean)
4 slices turkey bacon – 2 ounces of protein or 1/3 leaner
6 ounces cooked chicken breast - cubed/sliced
1/4 tsp garlic powder (1/2 Condiment)
1/8 tsp onion powder (1/4 Condiment)
1/4 c chicken stock (1/4 Condiment)
pinch of red pepper flakes
dried parsley, for garnish
2 tablespoons grated Parmesan cheese (2 Condiments)
1/4 teaspoon salt (1 Condiment)
1/8 teaspoon pepper (1/4 Condiment)
Directions:
In a large saute pan, over medium heat, cook the bacon until it becomes a light brown but is not yet crispy. Leave in the pan.
In a medium bowl, whisk the eggs together. Combine the eggs with the bacon mixture and broth, warming the eggs in the pan. Add the spaghetti squash, cooked chicken, seasonings, and parmesan cheese and toss to thoroughly combine and until squash is heated through. Serve immediately.

Per serving - 1 Lean, 3 Greens, 2.25 Condiments and no healthy fats required per serving.
