Taco Tuesday .. soup version
Creamy Taco Soup
4 oz reduced fat cream cheese
1 cup low fat plain greek yogurt
2 10 oz cans of Rotel diced tomatoes
1 Tbsp Taco seasoning
4 cups low sodium beef/chicken/vegetable broth
1-2 TBSP fresh cilantro
1/2 cup shredded cheese for topping.
Instructions:
Brown ground meat until fully cooked.
While meat is browning, place cream cheese, tomatoes, and taco seasoning into crockpot.
Drain any grease off meat and add meat to crockpot. Stir to combine.
Pour broth into crockpot, stir.
Cook on low 4 hrs or high for 2 hrs.
Add greek yogurt & cilantro* last, heat through, serve.
Top with shredded cheese.
Makes 6 servings. Per serving: 1 lean protein, 1 green, 3 condiments.
