Crockpot Creamy Potato & Hamburger Soup is a deliciously rich and comforting dish that’s perfect for a cozy meal.

1 pound ground beef

1 large onion, chopped

2 cloves garlic, minced

4 large potatoes, peeled and diced

3 large carrots, sliced

2 celery stalks, sliced

4 cups chicken or beef broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon paprika

Salt and pepper to taste

1 cup heavy cream

2 cups shredded cheddar cheese

1 cup milk

2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

Fresh parsley, chopped (for garnish)

Extra shredded cheddar cheese (for garnish)

Instructions

1. Brown the Ground Beef:

In a large skillet, brown the ground beef over medium-high heat until it’s no longer pink. Drain any excess fat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.

2. Prepare the Crockpot:

Transfer the browned beef mixture to a crockpot. Add the diced potatoes, sliced carrots, and sliced celery.

3. Add Broth and Seasonings:

Pour in the chicken or beef broth. Add the dried thyme, dried parsley, paprika, salt, and pepper. Stir to combine.

4. Cook on Low:

Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes and vegetables are tender.

5. Add Cream and Cheese:

Stir in the heavy cream, shredded cheddar cheese, and milk. If you prefer a thicker soup, add the cornstarch mixture and stir well. Continue to cook on low for an additional 15-20 minutes, until the cheese is melted and the soup is creamy.

6. Serve:

Ladle the hot soup into bowls and garnish with fresh chopped parsley and extra shredded cheddar cheese if desired. Serve with crusty bread for a complete meal.

White Cake Mix

8 oz can Crushed Pineapple (with juice)

1 cup Granulated Sugar

½ tsp Vanilla Extract (for pineapple mixture)

8 oz package Cream Cheese, softened

½ cup Butter, softened

3 cups Powdered Sugar

½ tsp Vanilla Extract (for frosting)

3 cups Crushed Pecans

Bake the Cake: Prepare and bake a white cake according to package directions in your desired cake pan. Once baked, cool the cake and

poke holes throughout with the end of a wooden spoon.

Avocado, Mozzarella, and Tomato Grilled Cheese 🥑🍅🧀

Ingredients:


2 slices of bread

1/2 avocado, sliced

2 slices of mozzarella cheese

1 tomato, sliced

1 tbsp butter

Salt and pepper to taste

Directions:


Butter one side of each bread slice. On the unbuttered side, layer avocado, mozzarella, and tomato slices. Season with salt and pepper.

Close the sandwich and cook in a skillet over medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Slice and serve warm.

Mint Chocolate Cheesecake 🫒 


𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 🫒

For the crust:

1 1/2 cups chocolate cookie crumbs (such as Oreos)

1/4 cup unsalted butter, melted

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

1/4 cup brown sugar, packed

1/4 cup cocoa powder

4 large eggs

1/2 cup sour cream

1 teaspoon vanilla extract

1/2 teaspoon peppermint extract

1 cup semi-sweet chocolate chips, melted and slightly cooled

For the ganache topping:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1/2 teaspoon peppermint extract

For garnish:

Whipped cream

Fresh mint leaves

Chocolate shavings

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 🫒

Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil to prevent leaks.

Prepare the crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan. Set aside.

Make the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Add the granulated sugar, brown sugar, and cocoa powder, and beat until well combined. Add the eggs one at a time, beating well after each addition. Mix in the sour cream, vanilla extract, and peppermint extract. Fold in the melted chocolate until fully incorporated.

Bake the cheesecake: Pour the cheesecake filling over the crust in the springform pan. Place the springform pan in a larger roasting pan and fill the roasting pan with hot water halfway up the sides of the springform pan. Cool and chill: Remove the cheesecake from the water bath and allow it to cool to room temperature. Refrigerate for at least 4 hours or overnight.

Prepare the ganache topping: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate and peppermint extract. Let it sit for 2 minutes, then stir until smooth and glossy. Allow the ganache to cool slightly.

1 cup cooked shrimp, peeled and deveined

2 tablespoons butter

1 clove garlic, minced

Salt and pepper to taste

Instructions:


Prepare Shrimp:


Heat a skillet over medium heat. Add a little butter or oil and cook shrimp until pink and opaque, about 2-3 minutes per side. Remove from heat and set aside.

Prepare Spinach:


In the same skillet, add a little more butter if needed and sauté garlic until fragrant. Add spinach and cook until wilted, about 1-2 minutes. Season with salt and pepper.

Assemble Sandwich:


Spread a layer of cheddar and mozzarella cheese on one side of each slice of bread.

Top two slices with shrimp and sautéed spinach. Close with the remaining slices of bread.

Grill Sandwich:


Heat a skillet over medium heat. Melt a little butter in the pan.

Ingredients:
- 2 lbs chicken tenders, thighs, or breast
- 2 tbsp olive oil
Garlic Parmesan Butter Sauce:
- 1 stick butter
- 8 to 10 cloves garlic, minced
- 1/2 cup parmesan, grated
- 1 tbsp hot sauce (more if desired)
- 2 teaspoons red pepper flakes
- 1/3 cup fresh parsley, minced
Chicken Seasonings:
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Instructions :
1. Prep and Skewer Chicken: Soak wooden skewers in water for at least 30 minutes. Mix chicken seasoning in a small bowl. Cut chicken into 3" pieces, toss in olive oil and spices, coating well. Skewer the chicken tightly.
