Cheesy Shrimp and Spinach Grilled Cheese
Ingredients:
4 slices of sourdough or your favorite bread
1 cup cooked shrimp, peeled and deveined
1 cup fresh spinach, chopped
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 tablespoons butter
1 clove garlic, minced
Salt and pepper to taste
Instructions:
Prepare Shrimp:
Heat a skillet over medium heat. Add a little butter or oil and cook shrimp until pink and opaque, about 2-3 minutes per side. Remove from heat and set aside.
Prepare Spinach:
In the same skillet, add a little more butter if needed and sauté garlic until fragrant. Add spinach and cook until wilted, about 1-2 minutes. Season with salt and pepper.
Assemble Sandwich:
Spread a layer of cheddar and mozzarella cheese on one side of each slice of bread.
Top two slices with shrimp and sautéed spinach. Close with the remaining slices of bread.
Grill Sandwich:
Heat a skillet over medium heat. Melt a little butter in the pan.
Grill the sandwiches for 2-3 minutes on each side, or until golden brown and the cheese is melted.
Serve:
Slice in half and serve hot.
