Creamy Garlic Sauce Baby Potatoes
Ingredients:
1 ½ lbs baby potatoes, halved
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
1 teaspoon dried thyme (or fresh)
½ teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Cook the potatoes: Boil baby potatoes in salted water until tender, about 12-15 minutes. Drain and set aside.
Make the garlic sauce: In a large pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the cream: Pour in the heavy cream, thyme, smoked paprika, salt, and pepper. Stir to combine and simmer for 2-3 minutes until the sauce starts to thicken slightly.
Add cheese and potatoes: Stir in the grated Parmesan cheese and cook for another 2 minutes until melted. Add the boiled potatoes and gently toss to coat them in the creamy garlic sauce.
Serve: Garnish with fresh parsley and serve warm.
